Although I’ve tried to watch my gluten, sugar, and dairy intake, I just have to be a bit naughty from time to time. This is a good old-fashioned macaroni and cheese. However, I snuck in some cauliflower that my husband never even suspected. This version of mac and cheese is a stove-top version.

Amity Study Club News

The Amity Study Club met last week at the historic Santa Fe Depot. Janice Plummer gave the program on the history of the depot building, designed by Louis Curtiss. Of the four Terra Cotta depots built by Curtiss during 1909-1911, Lubbock, Post, Snyder, and Sweetwater, only the Post depot remains.

Spring fever? I can see it in the eyes of our teachers and children. If you’ve ever worked at a school or been an actively involved parent, you never forget that look or feeling. Those tests are coming quickly, and I won’t print my thoughts on that.
