As we begin to breeze into spring, it becomes my favorite time of the year in parts of Texas. When our area is blessed with moisture, our wildflowers paint our scenery with a loveliness we aren’t accustomed to.

Soffritto is a combination of onion, carrot, and celery. In Italy, soffritto is finely diced, uniformly. But it is very similar to the French version, called mirepoix, which is often diced a bit larger. The threesome is also referred to as the holy trinity by some.

Lynn Simpson, Post Rotarian, will be speaking Tuesday, 3 April, on the “Slaton Bakery.” The Slaton Bakery turned 100 years old this March, and Lynn will take us through the “Bakery’s” and Wilson’s family history.

Friday, March 24 – HS Track– The high school track and field teams will host the Bold Gold Caprock Relays. Saturday, March 25 – Softball – Varsity and JV softball teams will continue district play at Colorado City. Varsity will begin at 11:00 am, and JV will start around 1:00 pm.
