If you were in town last Monday morning you may have seen the Oscar Mayer Wienermobile driving down Main Street with local people waving from every window. The Wienermobile stopped at Preston Poole’s office across the street from the courthouse. Several people were waiting for its arrival.

Spring is certainly in the air and we are probably all itching to be outdoors. I love seeing my neighbors out and about again. And when the West Texas wind isn’t making an appearance, it’s nice to enjoy the backyard, parks, and going to the lake.

City unveils changes at Community Center

The City of Post held an open house last week at the Community Center to unveil the upgrades to the facility. Guests were shown the areas of the center that had been painted, polished, and created.

Soffritto is a combination of onion, carrot, and celery. In Italy, soffritto is finely diced, uniformly. But it is very similar to the French version, called mirepoix, which is often diced a bit larger. The threesome is also referred to as the holy trinity by some.

Lynn Simpson, Post Rotarian, will be speaking Tuesday, 3 April, on the “Slaton Bakery.” The Slaton Bakery turned 100 years old this March, and Lynn will take us through the “Bakery’s” and Wilson’s family history.
